Whole Wheat Zucchini Bread

1 c. flour
1 c. whole wheat flour
1 c. sugar
2 tsp baking powder
¼ tsp salt
1 tsp baking soda
1 ½ tsp cinnamon
¼ tsp nutmeg
¼ tsp cloves
6 egg whites
½ c. applesauce
½ c. buttermilk
1 tsp vanilla
1 ½ c. shredded zucchini

Spray 9 inch round baking tin with spray and preheat oven to 350. Stir together dry ingredients. Make a well in the center of the mixture. Beat egg whites until foamy. Add applesauce, buttermilk and vanilla and stir. Add zucchini until well combined. Pour wet mixture into well and stir just until moistened. Don’t over mix. Pour into prepared pan and bake for 40-50 min or until toothpick tests clean. Cool in pan for 10 min, then remove to a wire rack to cool completely.
