2 T oil
1 tsp cumin
1/2 tsp coriander
2 stalks celery chopped
1 carrot chopped
1 onion chopped
1 leek chopped
6 cloves garlic smashed
8 c. broth
2 c. water
2 c. red lentils
thyme, bay leaf
1 lemon juiced
2 tsp salt
Heat oil and add cumin and coriander. Cook and stir about 30 sec. Add vegetables and garlic. Cook until onion and leek are tender. Add liquid, lentils and herbs. Bring to a boil, reduce heat and simmer 45-60 min. Stir in lemon juice, season with salt and pepper.
