Finger Picking Chicken Balls

1 T olive oil
1 onion finely chopped
1/2 c. grated carrot
1 large apple peeled and grated
2 chicken breasts cut into chunks
1 T fresh parsley
1 tsp fresh thyme
1/2 c. fresh bread crumbs
1 chicken bouillon cube crumbled
flour

Saute half the onion and grated carrot for 3 min in oil. Using your hands, squeeze a little extra liquid out of apple. Mix together apple, chicken and sauteed onion and carrot along with the raw onion, herbs, bread crumbs and stock cube and chop for a few seconds in food processor. Season with salt and pepper. Form mixture into balls and roll them in flour and fry them in a little oil until lightly golden and cooked through.
