1 c. whole wheat flour
3/4 c. unbleached white flour
1 T baking powder
1/2 salt
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp nutmeg
2 eggs
1 c. pumpkin (or pureed winter squash)
1 tsp vanilla
2 c. milk
3 T canola oil
Stir together all the dry ingredients into a medium size bowl. In another bowl, beat eggs with the pumpkin and vanilla. Beat in milk and oil until smooth. Add to flour mixture. Cook as usual.
