Fresh Tomato Soup

1 tsp butter
1/4 c. finely chopped onion
5 c. chopped seeded tomato (about 2 3/4 lbs)
2 c. low-fat milk
1/2 tsp salt
dash pepper

Melt butter in large pan over med heat. Add onion; saute 3 min. Add tomato; cook, covered, over med meat for 10 min. Uncover; cook until mixture is reduced to 2 cups (about 25 min) stirring occasionally. Place mixture in blender and process until smooth. Combine the tomato mixture, milk, salt and pepper in pan and cook over med-low heat 2 min or until heated.
