2 T. olive oil
1 onion chopped
3 garlic cloves pressed
2 cans black beans drained
2 med sweet potatoes, cooked and mashed
1 tsp cumin
6 tortillas
Cilantro and cheese
In skillet, heat oil and cook onion and garlic until onion is soft. Add beans, stir in mashed sweet potatoes, add cumin and mix well. Heat tortillas and plop bean mixture inside. Top with cheese and cilantro.
